Our syrup comes from two families of tappers in Vernon County who boil the old way — wood-fired, watched all night, pulled at exactly the right density. Forty gallons of sap makes one gallon of syrup. That ratio is the reason this stuff has never been cheap and never will be.

Nuts go into a dry cast-iron pan in eight-pound loads. Any more and the middle steams instead of toasting. We pull walnut early to keep it buttery and push pecan dark until the whole kitchen smells like praline — which is how we know it is ready, and always has been.
8 lbper batch, maximum
This is the part nobody else bothers with. The nuts are folded in while both are still warm, so the syrup thins just enough to reach every ridge before it sets. Jarred within the hour, labelled by hand, boxed the same afternoon. Pan to packed in under forty-eight hours.

Vernon County sap, wood-fired down to 66.9 brix. Amber grade sits between the delicate early run and the molasses-heavy late one — enough character to survive a nut, not enough to bully it.
One ingredient. No corn syrup, no invert sugar, no “natural flavour”.

I bought one jar of Maple Syrup Over Pecans to be polite to a friend. I have now bought eleven. The pecan one does not survive a week in this house and I have stopped pretending it will.
Yoghurt, oatmeal, a warm brie, the back of a spoon at eleven at night. We are not here to judge how it gets eaten — only to make sure there is enough of it.
